Elizabeth Howes, professional chef and author of The Modern Salad, will be speaking about the time-honored art of fermenting green tea and its use in the the wildly popular Burmese tea leaf salad. She will also demonstrate how to create a vibrant version of fermented tea leaves at home, no dirt pit or passport required. In addition, Elizabeth will discuss some simple ideas for unique finishing salts and rubs to incorporate into your fall cooking, utilizing whole, organic tea.
Recipes are inspired by Burma’s iconic tea leaf salad, including the Charcuterie Board Salad with Mustard-Maple Vinaigrette, Grilled Peach and Corn Salad with Lemongrass-Shallot Vinaigrette, Summer Fig and Caramelized Onion Salad with Aged Balsamic Reduction, and Masala Chai Braised Pork and Garlic Udon Salad.
Admission $30, the fee includes The Modern Salad hardcover, full-color cookbook with 35 delicious protein and superfood rich recipes.
